泰式鳳梨飯

泰式鳳梨飯

材料:

鳳梨、火腿、冷凍什錦蔬菜、煮好之米飯、椰漿適量。

作法:

  1. 鳳梨直剖成兩半,果皮保持完整,將果肉挖出切丁備用。鳳梨之湯汁可留下來備用。
  2. 火腿切丁。
  3. 起油鍋,倒入火腿丁炒熱,再加入冷凍什錦蔬菜炒勻。
  4. 加入米飯一起炒, 再倒入椰漿及鳳梨汁炒勻,最後以少許鹽調味即可。
  5. 將炒好之鳳梨飯,填裝於鳳梨殼內即可上桌供食。

祕訣︰

  1. 因炒飯還要加入椰漿及鳳梨汁,故飯要煮得比平常的飯硬一點,就是在煮飯時水少一點,若飯太軟炒得時候容易糊掉。
  2. 或者在煮飯時以椰漿取代部份的水來煮飯。
  3. 在炒飯裡加椰漿,可增添炒飯之香味及口感。
  4. 鳳梨可用鳳梨罐頭來代替。
  5. 若買的鳳梨較酸,炒飯時可加些糖來調味。
  6. 椰漿可以用椰漿粉加水調和來代替。
