    何謂湯種

    ???【湯種】為日本語,意為溫熱的麵種或稀的麵種,
    【湯】有開水、熱水、泡溫泉之意,而『種』此指麵肥。

    湯種是將麵粉加水後在瓦斯爐上加熱,或是將麵粉加入不同溫度的熱水,
    使澱粉糊化,這種糊化的麵糊稱為【湯種】也有人稱為【燙種】。
    湯種與其他麵包用的材料攪拌、整形、烘焙後的麵包為【湯種麵包】。

    湯種麵包和其他麵包最大的差別在於澱粉糊化便吸水量增多,
    因此麵包的組織柔軟,具有彈性,可延緩老化。
