螃蟹的挑選重點

你會買螃蟹嗎?你知道挑選的重點嗎?

如下︰

  1. 公蟹的肉較結實,其腹部的腹臍是長尖的三角形。
  2. 母蟹的蟹黃較香,其腹部的腹臍是偏圓形。
  3. 選蟹腳完整,沒有殘肢的;活動力要強,重量較重的。海蟹的話,腹部潔白者較佳。
  4. 如果挑選時螃蟹未縛繩,應以夾子從腹部夾起,而不是用夾子去夾大蟹爪,因為螃蟹掙扎時很容易蟹腳會因此而折斷。
  5. 買回來的螃蟹最好要立即蒸煮食用,蟹肉腐壞得很快,放上幾個鐘頭就已經不新鮮了。
