    (小吃)炸釀蘑菇

    ???材料:
    1. 鮮蘑菇250g
    2. Parmigiano Reggiano Cheese 半杯
    3. 菠菜葉蓉一杯
    4. 黑胡椒碎半茶匙
    5. 麵包糠一杯
    6. 蛋黃2隻
    7. 麵粉半杯


    作法:
    1. 鮮蘑菇除蒂,用清潔的濕毛巾抹乾淨.
    2. 硬芝士磨碎.
    3. 菠菜葉洗淨用滾水灼至軟身,搾乾水份切幼,加入芝士及黑胡椒碎拌勻釀入蘑菇內.
    4. 蛋黃加2茶匙清水拌勻成蛋汁.
    5. 把釀好的蘑菇先撲上一層薄薄的麵粉.再把整隻蘑菇蘸上蛋汁,外層再沾上麵包糠.
    6. 燒熱炸鍋大火下油,燒熱油後調慢火下蘑菇炸至金黃色,撈起墊上吸油紙上碟即成.
    注意事項:
    1. 買回來的麵包糠不夠幼細,炸起來不雅觀.可用密實袋袋好麵包糠,再用麵粉幹轆至較幼細,炸 起來效果較理想.
    2. 芝士可採用任何硬芝士代替.
    3. 若炸釀蘑菇不是立即食用,可能不夠酥脆,需再翻炸一次.
